Open Hand has, under the direction of a talented team of Registered Dietitians, been providing nutrition education in a variety of settings for many years. But exactly what does that look like? It can be in-depth one-on-one nutrition consults with a grandmother battling diabetes, a hands-on nutrition experience for at-risk youth that supports them in making better food choices, or a 6-week course for low-income families designed to teach them how to shop, cook, and eat healthier on an extremely limited budget.
It’s proven that access to healthy foods combined with behavior-changing nutrition knowledge can have a measurable effect on the health of these vulnerable individuals and families. And the impact on children is even more evident, as eating patterns built during childhood serve as a foundation for their lives — what they eat early on shapes brain development, metabolism, and overall health.
